Other
- Corn or flour tortillas
- Freshly chopped chives
Bang Bang Sauce
- Mix ¼ cup mayo, 3 tbsp Thai sweet chili sauce, and 1 tsp Sriracha (use more or less depending on your spice preference) in a bowl until combined and set aside.
Slaw
- Combine ½ cup of shredded carrots, 1 shredded cup cabbage, ¼ cup mayo, 2 tbsp white vinegar (or lemon juice), salt and pepper to a bowl and mix until combined. Set in the fridge until you’re ready to use it.
Chipotle Mayo
- Combine ½ cup mayo and 2-3 tbsp diced chipotle peppers in adobo in a bowl and whisk until combined. Set aside until assembly.
Shrimp
- Preheat your air fryer to 400 Fahrenheit for 5 minutes.
- While that preheats, take 1lb of raw peeled and deveined shrimp and dredge in seasoned flour (I seasoned mine with salt, pepper, garlic powder, onion powder, and paprika). After that, dip your shrimp in two whisked eggs, and finally in seasoned bread crumbs.
- Spray the bottom of your air fryer with 0 calorie cooking spray and lay down a single layer of your breaded shrimp. Don’t overcrowd your air fryer or the shrimp won’t get crispy. Spray the tops of your shrimp with cooking spray and cook at 400 Fahrenheit for 5 minutes. Flip and cook for an additional 5 minutes (10 minutes total). You might have to cook these in batches depending on how big your air fryer is.
- Once finished, toss shrimp in your bang bang sauce until the shrimp is evenly coated.
Building Your Tacos
- Time to assemble. Start with one corn or flour tortilla, a couple spoonfuls of your slaw, as many shrimp as you want, and top with a drizzle of the chipotle mayo and some freshly chopped chives! Enjoy :)
